Troy student turns necessity into business opportunity

Troy University student Jaycie Chandler turned a necessity for sourdough bread into her own business with the launching of Deep South Sourdough Company.

A medical issue led Chandler, a Goshen native, at a loss for anything that would ease her discomfort.

“I got my gall bladder removed two years ago and had really bad stomach issues,” Chandler recalled. “I’ve tried all kinds of medicines and natural stuff and nothing worked. The doctors kept telling me to try and adjust but I just needed any kind of relief.”

Chandler, who is a Biomedical Sciences student at Troy, found a solution to her issues with sourdough bread.

“I heard sourdough was good for your gut,” she said. “I’m majoring in BioMed at Troy, so I study microbiology and the fermentation process and I’ve just been obsessed with it since I learned about it. It’s really helped my stomach drastically. It’s almost the only thing I can keep on my stomach that doesn’t irritate it or upset it.”

Chandler’s parents are the owners of The Old Barn Restaurant in Goshen and she and her father started learning how to make homemade sourdough together. After beginning in January, Chandler decided to start her own business serving up sourdough to the community. 

“It’s been going really well,” she said. “It’s grown a lot more than I expected it to so far. I’m really excited to see how it goes.”

Deep South Sourdough offers up plain, jalapeno cheddar, blueberry lemon, garlic parmesan and everything seasoned sourdough loaves along with chocolate chip sourdough, everything bagels, cinnamon honey bagels and even cinnamon rolls.

“The jalapenos I grow myself. I try to source everything I use as local as I can,” Chandler said. “My base for everything is simple; flour, water, salt and then add-ins like jalapenos or chocolate chips.” 

Deep South Sourdough will be attending its first event as a vendor on July 4 in Luverne for the “Stars and Stripes Over the Lu” event. 

“It’s the first one for me but hopefully the first of many,” she said. “I’m really excited.” 

Chandler takes pre-orders beginning every Monday from 9 a.m. until Tuesday at 5 p.m. with pickup on Fridays at The Old Barn in Goshen from 4 until 8 p.m. Chandler said she will also deliver in the local area, including in Troy.
